Ingredients
- 4 egg yolks
- 1 lemon rind
- 240 ml boiling water
- 200 gr sugar
- 60 ml lemon juice
- 28 gr butter
- 24 gr cornstarch
- 1 gr salt
Combine sugar and cornstarch in top of double boiler. Add the water slowly, stirring until thick. Gradually add the egg yolks, butter, grated lemon rind, lemon juice and salt.
