Ingredients
- 1 egg
- 240 ml buttermilk see note
- 190 gr wheat bran
- 150 gr brown sugar
- 130 gr all purpose flour
- 85 gr raisins
- 80 ml vegetable oil
- 5 gr baking soda
- 5 gr baking powder
- 2 gr vanilla
- 1 gr salt
*1 cup milk with 1 Tablespoon lemon juice (or vinegar) may be substituted for 1 cup buttermilk. Preheat oven to 190ÂșC . Mix together wheat bran and buttermilk; let stand. Combine vegetable oil, egg, sugar and vanilla and add to buttermilk-bran mixture. Sift together flour, baking soda, baking powder and salt. Add to first mixture and stir until just blended. Add raisins or dates and spoon into prepared muffin tins. Bake for 15-20 minutes.
