Ingredients
- 3 eggs
- 400 gr sugar
- 350 ml vegetable oil
- 260 gr carrots
- 250 gr flour
- 140 gr nuts
- 80 gr coconut (shredded)
- 5 gr baking soda
- 5 gr cinnamon
- 4 gr vanilla extract
- 1 gr salt
Cream Cheese Frosting In a mixing bowl, combine dry ingredients. Add eggs, oil, carrots and vanilla; beat until combined. Stir in pineapple, coconut and half cup nuts. Pour into a greased 13x9x2-inch baking pan. Bake at 180ÂșC or 50-60 minutes or until cake tests done. Cool. Frost cooled cake with Cream Cheese Frosting. Sprinkle with remaining nuts. Store in refrigerator.
