Ingredients
- 3 eggs
- 450 gr dark brown sugar
- 375 gr flour
- 260 gr zucchini (grated)
- 240 ml salad oil
- 140 gr nuts (chopped)
- 14 gr vanilla
- 5 gr baking soda
- 3 gr salt
Beat eggs until frothy. Add oil, sugar and zucchini. Stir in dry ingredients. Fold in vanilla and nuts. Pour into 2 9x5 inch greased loaf pans. Bake at 180ºC or 1 hour. Or for muffins, pour into greased muffin pans and bake at 220ºC or 18 to 23 minutes.
