Ingredients
- 250 gr unbleached all-purpose flour
- 240 ml water (cold)
- 80 gr nonfat dry milk powder
- 22 gr cheddar cheese (grated white)
- 20 gr wheat germ
- 16 gr emmenthal cheese (grated)
- 14 gr mozzarella cheese (grated)
- 14 gr baking powder
- 3 gr salt
Makes about 20 Preheat oven to 180ºC . Lightly butter 2 baking sheets. Combine all ingredients except butter and water in large bowl of heavy-duty electric mixer. Using paddle attachment, cut in butter until mixture resembles coarse meal. Slowly pour in water, beating until dough just comes together. Turn out onto lightly floured surface and pat to 2 cm thickness. Cut into 6 cm squares using floured knife. Arrange on prepared sheets, spacing 3 cm apart. Bake until light brown, about 15 minutes. Serve immediately. (Dough can also be made by hand.) Bon Appetit
