Ingredients
- 180 gr rice (cooked)
- 120 gr mayo
- 90 gr monterey jack
- 60 gr ricotta cheese
- 38 gr pkg spinach (frozen chopped thawed)
- 16 gr green onion (sliced)
- 1 gr garlic salt
- 1 gr pepper
Combine 0.625 C cheese and next four ingredients in a large bowl; stir in rice, spinach and green onions.
Spoon mixture into a lightly greased 1 litre casserole dish. Bake, uncovered, at 190ÂșC for 20 min. Sprinkle casserole with remaining 0.125 c cheese and bake additional 5 min.
