Ingredients
- 1 egg
- 180 ml honey
- 250 gr pack pumpkin puree (solid)
- 190 gr all purpose flour
- 120 gr walnuts (chopped toasted)
- 55 gr butter
- 7 gr baking powder
- 5 gr baking soda
- 4 gr cinnamon (ground)
- 1 gr salt
- 1 gr ginger (ground)
- 1 gr nutmeg (ground)
In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg; set aside. Using an electric mixer, beat butter until light; beat in honey, egg and pumpkin. Gradually add flour mixture, mixing until just blended; stir in walnuts. Spoon into dozen greased or paper-lined 2- 0.5-inch muffin cups. Bake at 180ÂșC for 25 to 30 minutes, or until toothpick inserted in center comes out clean. Remove muffins from pan to wire rack. Serve warm or at room temperature.
