Ingredients
- 2 egg whites whipped
- 280 gr chicken (skinless boneless)
- 240 ml buttermilk at room
- 130 gr unbleached flour
- 120 gr cornmeal
- 60 ml applesauce at room
- 30 ml honey
- 16 ml mustard dry
- 14 gr baking powder
- 2 gr baking soda
- 1 gr salt
Preheat oven at 350. Prepare dozen muffin tins with cooking spray and flour. In a mixing bowl, combine flour, cornmeal, baking powder, mustard, baking soda, and salt. In a another mixing bowl, combine chicken, buttermilk, applesauce, egg whites, and honey. Mix wet ingredients with dry ingredients just until moistened. Use an ice cream scoop to fill muffin tins 0.75 full. Bake for 20 minutes.
