Ingredients
- 240 ml orange juice
- 130 gr sugar
- 50 gr tapioca
- 30 ml lemon juice
- 3 gr orange peel banana in a blender (grated optional)
- 2 slices mangos peel
Transfer puree to a 3 litre pan. Stir in lemon juice, orange juice, sugar, and tapioca. Let stand for 5 min.; then bring to a full boil over med-high heat, stirring constantly. Remove from heat; stir in orange peel. Let cool for 15 min.; cover and refrigerate until softly set (about 2 hrs). To serve, spoon flummery into 4 6 servings.
