Ingredients
- 4 eggs divided
- 1/2 real bacon bits
- 1/4 pimentos (diced)
- 350 gr rice (cooked)
- 240 ml milk
- 190 gr swiss cheese divided (grated)
- 7 gr parsley (minced)
- 2 gr salt
- 2 gr cumin
- 1 ml pepper sauce (hot)
- 1 package green chiles (diced)
Combine rice, 1 cup cheese and 2 eggs, slightly beaten. Press 1 tablespoon mixt ure in bottoms of 48 miniature muffin cups that have been sprayed with a non-st ick spray. Bake at 200ÂșC or 15 minutes, or until lightly browned. Combin e bacon, chiles, pimentos, parsley and remaining cheese. Spoon evenly over rice layer. Blend milk, seasonings and remaining eggs.
