Ingredients
- 1 egg
- 240 ml unsweetened applesauce
- 170 gr flour
- 150 gr sugar
- 60 ml skim milk
- 60 gr egg substitute
- 60 gr semi-sweet chocolate chips
- 22 gr cocoa powder
- 16 gr instant coffee dissolved in
- 16 ml water
- 9 gr baking powder
- 5 ml safflower oil
- 3 gr cinnamon
Spray muffin cups with vegetable cooking spray. Preheat oven to 400 degrees. Combine milk, oil, applesauce, egg substitute and coffee mixture in a medium bowl. Combine remaining ingredients in a large bowl. Add wet ingredients to dry, mixing until combined. Fill muffin cups half to 0.75 full. Bake 30-40 minutes, until tester inserted into center comes clean.
