Ingredients
- 2 eggs
- 375 gr flour
- 325 gr brown sugar
- 250 gr raisins
- 180 ml boiling water
- 95 gr shortening
- 5 ml soda
- 4 gr vanilla
- 3 gr cinnamon
Simmer raisins and water for 10 minutes. Cool. Meanwhile, mix the brown sugar, shortening, eggs, cinnamon, cloves, soda, vanilla then flour. Add the raisin and water mixture. You may add 1 cup of nuts or 1 cup of coconut. Spread on large cookie sheet, making middle thin. While baking, make icing. Icing: 1 cup of powdered sugar, half stick of margarine, softened and quarter cup of milk. This mixture is stiff to be spread on "hot" cake. Randy Rigg Submitted By RANDY RIGG On 08-18-94 ----
