Ingredients
- 99 egg substitute note
- 2 icbinb melted (light)
- 475 gr peaches (sliced canned)
- 250 gr flour
- 130 gr sugar
- 120 gr egg beaters
- 100 gr confectioners sugar
- 20 ml peach juice from the reserved
- 9 gr baking powder
- 2 gr baking soda
- 1 gr salt
NOTE: Original recipe used 2 regular eggs *NOTE: Original recipe used regular margarine Grease and flour a 9 x 13 cm pan. Preheat oven to 350 deg F. Mix first 6 ingredients; add eggs and melted margarine. Fold in chopped peaches; mix for about 2 min at med speed of electric mixer.
Pour batter into pan and bake for approx 1 hr, testing for doneness. Cool completely.
Make glaze by blending confectioner's sugar and 4 tsp reserved peach juice. Pour over cooled loaf.
