Ingredients
- 2 eggs
- 1 persimmon pulp
- 325 gr flour
- 220 gr brown sugar firmly packed
- 170 gr raisins
- 140 gr nuts coarsely (chopped)
- 120 ml orange juice
- 110 gr butter
- 6 gr orange rind (grated)
- 5 gr baking soda
- 3 gr baking powder
- 3 gr cinnamon
- 1 gr nutmeg
- 1 gr mace
- 1 gr salt
Cream butter and sugar lightly, then add next four ingredients. Measure flour and add soda, baking powder, spices and salt. Stir once together then add to first mixture. Fold in nuts and raisins.
To make Drop cookies, drop by teaspoon on greased cookie sheet. Bake at 190ºC or dozen to 15 minutes.
To make persimmon brownies, pour into a 13 x 23 cm greased pan. Bake at 180ºC or 20 to 30 minutes or until brownies start to leave sides of pan. Cut in squares and serve a la mode with ice cream or sweetened whipped cream sprinkled with grated orange rind.
Makes 3 dozen drop cookies, or dozen squares.
