Ingredients
- 4 garlic (cloves minced)
- 2 cans black beans
- 1 jalapeno peppers seeded
- 1 egg (white beaten)
- 60 gr onion (chopped)
- 28 gr bread crumbs
- 16 gr flour divided
- 14 gr parsley (finely chopped)
- 3 gr coriander (ground)
- 1 gr cumin
- 1 gr cayenne pepper
Combine beans, onion, parsley, garlic, jalapeno peppers, one third cup flour, coriander, cumin & cayenne; mix in egg white. Coarsely mash into a thick chunky paste or process in food processor, using pulse. Mix in bread crumbs, if necessary, for make firm mixture. Refrigerate 1 to 2 hours for flavors to blend.
Form into 6 patties, lightly coating with flour. Cook in sprayed skillet over medium heat 5 to 7 minutes on each side.
