Ingredients
- 2 egg whites
- 1/2 all purpose flour
- 1/2 wheat flour (whole)
- 240 gr idaho pinto beans (cooked)
- 190 gr all purpose flour
- 180 ml milk
- 110 gr brown sugar
- 85 gr raisins
- 60 ml vegetable oil
- 9 gr baking powder
- 2 gr baking soda
- 1 gr salt
- 1 gr cinnamon
- 1 gr nutmeg
Puree beans with milk in blender or food processor until smooth. transfer to bowl. Beat in egg whites, oil and brown sugar. Combine ingredients are moistened. Spoon into greased or paper-lined muffin until golden. Variations: May substitute honey for brown sugar and reduce the milk to half cup. May substitute chopped dates or apples for raisins.
