Ingredients
- 1 1/2 egg whites
- 1 instant oatmeal
- 240 ml nonfat milk
- 130 gr cake flour
- 75 gr strawberries (diced)
- 75 gr brown sugar
- 40 gr raisins
- 30 gr crystalized ginger (diced)
- 14 gr baking powder
- 3 gr cinnamon
Preheat oven to 400 deg f. Spray muffin cups with nonstick spray. Combine oatmeal, flour, baking powder, cinnamon, and brown sugar in a bowl. Mix ginger, raisins, egg whites, milk and strawberries in another bowl. Add to dry mix and stir to combine. Divide the batter between the dozen muffin cups. Bake 15 minutes or until golden.
