Ingredients
- 1 egg
- 220 gr all purpose flour
- 180 ml milk
- 140 gr rhubarb (finely chopped)
- 100 gr granulated sugar
- 75 gr strawberries (sliced)
- 80 ml vegetable oil
- 9 gr baking powder
- 4 gr orange rind (grated)
- 1 gr salt
Granulated sugar for dusting Preheat the oven to 200ºC . In a large bowl, combine the flour, sugar, baking powder, salt and orange rind. In a seperate bowl, beat together the egg, milk and oil. Stir the wet ingredients into the dry ingredients. Gently stir in the rhubarb and strawberries. Do not overmix. Fill dozen well-greased muffin cups 0.66666666666667-full with the batter. Sprinkle the muffin tops lightly with sugar. Bake for 20 to 25 minutes, or until a toothpick inserted in the centre of a muffin comes out clean.
