Ingredients
- 9 springform (pan)
- 3 egg yolks
- 3 egg whites
- 1 filling
- 1 gelatin (envelope unflavored)
- 1 equiv
- 1,100 ml water (cold)
- 700 gr sugar
- 240 ml cream whipped (heavy)
- 450 ml cream cheese softened
- 150 gr granulated sugar
- 140 gr coconut meat (shredded)
- 60 ml lime juice
- 18 gr butter melted (unsalted)
- 16 gr flour
- 2 gr lime rind (grated)
Remove from heat and add softened gelatin and stir until dissolved. Beat cream cheese at low speed while gradually adding gelatin/ egg mixture until well blended. Stir in lime juice, grated lime, few drop green coloring. Fold in whipped cream and stiffly beaten egg whites. Pour filling over cooled crust and chill until firm. Remove from springform and garnish with grated lime rind. In summer decorate serving plate with fresh mint leaves if desired. From the recipe files of suzy@gannett.infi.net
