- 4 dry out the skin
- 2 grapefruit
- 650 gr duck
- 700 ml duck stock
- 700 ml veal stock
- 80 ml vinegar
- 50 gr sugar
Dried-fruit Couscous
- 475 ml duck stock
- 210 gr couscous
- 50 gr figs (dried sliced)
- 50 gr pitted dates (sliced)
- 14 gr butter
- 1 gr salt
