Bakewell Tart

• 3 sized eggs
• 3 larger than the baking tin (inches)
• 325 gr all purpose flour
• 190 gr vegetable shortening (solid)
• 110 gr butter at room temperature
• 100 gr superfine sugar
• 90 gr almonds (ground)
• 60 ml ice water
• 30 ml water to help
• 24 gr heaped of the flour you set to one side
