Ingredients
- 2 eggs
- 1/2 amaranth
- 2 c wheat flour (whole)
- 1 c boiling water
- 1/2 c honey
- 1 c dates (chopped)
- 1 c pecans (chopped)
- 1/4 c butter
- 2 ts baking powder
- 1 ts vanilla extract
Soak dates and amaranth in boiling water. Beat eggs well, add honey and butter; beat well. Stir in all remaining ingredients mixing well. Pour into an oiled loaf pan. Bake at 350 F for 1 hour and 15 min. From Arrowhead Mills
