Ingredients
- 2 eggs
 - 1/2 amaranth
 - 250 gr wheat flour (whole)
 - 240 ml boiling water
 - 120 ml honey
 - 150 gr dates (chopped)
 - 140 gr pecans (chopped)
 - 55 gr butter
 - 9 gr baking powder
 - 4 gr vanilla extract
 
Soak dates and amaranth in boiling water. Beat eggs well, add honey and butter; beat well. Stir in all remaining ingredients mixing well. Pour into an oiled loaf pan. Bake at 180ÂșC for 1 hour and 15 min. From Arrowhead Mills
