- 3 c rice (hot cooked)
- 12 oz artichoke hearts (marinated)
- 1/2 c green onions (sliced)
- 4 oz mushrooms (sliced fresh)
- 1 1/2 tb wine vinegar (white)
- 1/4 c parmesan cheese (grated)
- 1/8 ts pepper (ground white)
Lettuce leaves Combine hot rice, artichoke hearts, mushrooms, onions, cheese, and pepper. Combine reserved liquid from artichokes and vinegar; shake to combine. Drizzle over salad. Spoon into individual lettuce-lined salad plates.
