Ingredients
- 1 egg
- 3/4 cup brown sugar (light)
- 1 cup wheat flour (whole)
- 1/2 c butter (unsalted)
- 1/2 cup flour (white)
- 1/4 cup yogurt
- 3/8 cup wheat germ
- 1/4 cup banana
- 2 teaspoon salt
- 1 teaspoon baking soda
Preheat oven to 350'F. Coat inside of 9x5 inch loaf panwith nonstick vegetable-oil cooking spray. Stirtogether whole-wheat flour, white flour, wheat germ,baking soda and salt in small bowl until well mixed.
Beat together margarine and sugar in medium-sizebowl until light and fluffy. Beat in egg. Stirtogether banana and yogurt in another bowl until wellblended. Mix the banana mixture alternately with theflour mixture, in batches, into the margarine mixture;stir just until combined. Spread the batter in theprepared pan.
Bake in preheated 350'F. oven 60-65 minutes oruntil wooden pick inserted in center comes out clean.
Cool in pan on wire rack 10 minutes. Remove breadfrom pan to wire rack to cool to room temperature.
