Ingredients
- 4 eggs
- 16 ounces pumpkin (canned)
- 3 1/2 cups flour
- 1 1/2 cups granulated sugar
- 1 cup sour cream
- 1 cup firmly packed brown sugar
- 1 cup enriched corn meal
- 3/4 cup raisins
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/2 cup pecans (chopped)
- 2 teaspoons pumpkin pie spice
- 2 teaspoons baking soda
- 2 teaspoons salt
- 1 teaspoon baking powder
Beat together pumpkin, sugars, eggs and oil. Combine dry ingredients and add t o pumpkin mixture; alternating with sour cream and water, mixing well after eac h addition. Stir in raisins and pecans. Pour into two well greased 9 x 5 loaf pans. Bake in preheated 350 oven about 1 hour and 10 minutes. Cool 10 minutes and remove from pans. If using small loaf pans bake 40 to 45 m inutes
