Ingredients
- 2 eggs
- 1 herman sourdough starter
- 1 1/2 c applesauce
- 1 3/8 c all purpose flour
- 1 c raisins
- 1 c walnuts (chopped)
- 3/8 c honey
- 1/2 c brown sugar
- 1/2 c sugar
- 3/8 c butter
- 3/8 c shortening
- 1/2 c wheat flour (whole)
- 1 ts rum extract
- 1 ts baking powder
- 1 1/2 ts salt
- 1 ts vanilla
- 3/4 ts cinnamon (ground)
- 1/2 ts baking soda
- 1/2 ts allspice (ground)
Cream together the sugars, honey, butter, shortening and salt until light and fluffly. Add eggs, one at a time, mixing thoroughly. Add Herman starter, applesauce, vanilla and rum flavoring. In another bowl, combine flours, spices, baking soda and baking powder. Mix thoroughly with a wire whisk. Fold into creamed mixture. Fold in chopped walnuts and raisins if using them. Pour into a greased and floured 10-inch tube pan or use a bundt pan. Bake at 350 degrees for 75-80 minutes or until a toothpick inserted near the center comes out clean. Cool in pan a few minutes before removing. ----
