Ingredients
- 2 eggs
- 1 herman sourdough starter
- 350 ml applesauce
- 170 gr all purpose flour
- 170 gr raisins
- 120 gr walnuts (chopped)
- 80 ml honey
- 110 gr brown sugar
- 100 gr sugar
- 75 gr butter
- 65 gr shortening
- 65 gr wheat flour (whole)
- 5 gr rum extract
- 5 gr baking powder
- 4 gr salt
- 4 gr vanilla
- 2 gr cinnamon (ground)
- 2 gr baking soda
- 1 gr allspice (ground)
Cream together the sugars, honey, butter, shortening and salt until light and fluffly. Add eggs, one at a time, mixing thoroughly. Add Herman starter, applesauce, vanilla and rum flavoring. In another bowl, combine flours, spices, baking soda and baking powder. Mix thoroughly with a wire whisk. Fold into creamed mixture. Fold in chopped walnuts and raisins if using them. Pour into a greased and floured 25 cm tube pan or use a bundt pan. Bake at 180ÂșC or 75-80 minutes or until a toothpick inserted near the center comes out clean. Cool in pan a few minutes before removing. ----
