- 4 chicken breasts
- 1 c bread crumbs (fresh)
- 3/8 c low fat yogurt (plain)
- 1 ts rosemary (dried)
- 1/2 ts lemon rind (grated)
- 1/4 ts salt
- 1/4 ts pepper
-skinless In shallow dish, stir together yogurt, rosemary and lemon rind; set aside. in separate shallow dish, combine bread crumbs, salt and pepper. Dip each breast into yogurt mixture, then into bread crumb mixture to coat. Place on greased baking sheet; bake in 350F 180C oven for about 20 minutes or until chicken is no longer pink inside. broil for 2 minutes or until golden brown. Per Serving: about 175 calories, 29 g protein, 2 g fat, 7 g carbohydrate
