Ingredients
- 2 c tomatoes (chopped peeled)
- 2 c long rice (cooked grain)
- 8 oz water-packed tuna
- 1 c onion (finely diced red)
- 1 c celery (finely diced)
- 1/2 c peas (frozen)
- 1/2 c scallions (chopped)
- 3 tb wine vinegar (red)
- 2 ts granulated sugar
- 1/4 ts salt
- 1/4 ts pepper
In a small bowl, combine vinegar, sugar, salt, pepper and 1 tablespoon of reserved tuna liquid. In a large bowl combine remaining ingredients; add vinegar mixture and toss. Let stand for 10 minutes; toss again and serve.
