Ingredients
- 1 chicken
- 850 gr bread crumbs
- 350 gr peach nectar
- 110 gr butter melted
- 100 gr celery (finely chopped)
- 100 gr olives
- 14 gr parsley
- 6 gr salt
- 3 gr pepper
- 1 gr sage
- 1/2 slices onion (sliced)
Rub 1 teaspoon salt and half teaspoon pepper over chicken inside and out. Melt b utter, add bread crumbs and cook 3-5 minutes. Add celery, onions, parsley, oliv es, sage, 1 teaspoon salt and half teaspoon pepper. Stir mixture and cook until vegetables are slightly wilted. Add half cup peach nectar. Remove from heat and use mixture to stuff hen. Pour remaining nectar over chicken. Bake uncovered 15 minutes or until chicken is brown. Cover and bake at 180ºC or 2- half hou rs or until chicken is tender. Baste as chicken cooks.
