Ingredients
- 1 cranberries
- 1 egg
- 190 gr flour
- 180 ml orange juice
- 100 gr sugar
- 75 gr butter
- 34 gr nuts
- 9 gr baking powder
- 3 gr salt
- 1 gr cinnamon
- 1 gr allspice
- 1 gr orange rind
Coarsely chop cranberries, sprinkle with quarter cup sugar & set aside.
Preheat oven to 190ºC , prepare pans.
Combine flour, quarter c sugar, baking powder, salt, cinnamon & allspice. In another bowl combine egg, orange rind & juice and melted butter. Add dry mix to wet mix & stir to moisten. Fold in cranberry mixture & nuts.
Spoon into pans & bake for 15-20 mins or until golden.
Makes 9 large muffins.
