Ingredients
- 475 ml water (hot)
- 150 gr sugar
- 95 gr shortening
- 80 gr coconut (shredded)
- 65 gr flour
- 32 gr cornstarch
- 9 gr vanilla extract
- 3 gr salt
Combine water & coconut. Let stand for 20 minutes. Blend at high speed for a few seconds. Add the rest of the ingredients. Blend till well mixed. Pour into a greased glass dish. Bake at 180ÂșC for 60-70 minutes. Cool on a wire rack & then chill in the fridge.
