- 12 spring-form (pan)
- 10 egg yolks room temperature
- 10 egg whites room temperature
- 2 grand marnier
- 1 powdered sugar
- 5,000 gr sugar
- 500 gr bittersweet dark chocolate
- 250 gr butter (unsalted)
- 250 gr superfine sugar
- 250 gr sugar
- 50 gr superfine sugar
Remove from oven, let rest 20 minutes. Invert onto plate and remove form. Dust with powdered sugar and serve with vanilla sauce and/or raspberry puree, if desired.
