Ingredients
- 6 carrot (grated)
- 1 none
- 650 ml water
- 525 gr sugar
- 500 gr flour
- 375 gr candied fruit
- 325 gr raisins
- 230 gr pecans
- 28 gr butter
- 18 gr baking soda
- 6 gr salt
- 5 gr cinnamon
- 4 gr allspice
If you wish to season this with spirits use about half cup of rum or brandy and after the cake has cooled thorougly, pour the alcohol gently over the cake. It may be best to do this just a little at a time over the period of 30 min. or so. Wrap tightly in foil and store in a cool place for as long a 3 months.
