Ingredients
- 3 eggs
- 2 madeira
- 1 pastry shell partially
- 240 ml cream (heavy)
- 60 gr shrimp (cooked fresh)
- 45 gr butter
- 32 gr swiss cheese (grated)
- 30 ml wine (white)
- 12 gr green onions (minced)
- 1 gr salt
- 1 gr pepper
Cook onions in butter 1 to 2 minutes. Add fish and stir 2 minutes. Add pepper a nd white wine. Raise heat and boil 1 minute. Allow to cool slightly. Beat eggs, cream and seasonings. Gradually add fish mixture. Pour egg-fish mixture into p astry shell and sprinkle with cheese. Bake at 190ºC or 25 to 30 minutes. Serves 4 to 6.
