Ingredients
- 2 eggs
- 325 ml milk
- 270 gr apricots (chopped dried)
- 250 gr unbleached flour
- 100 gr sugar
- 80 gr quick-cooking oats
- 60 gr walnuts (chopped)
- 60 ml vegetable oil
- 14 gr baking powder
- 10 gr pumpkin pie spice
- 3 gr salt
Sift together flour, sugar, baking powder, salt and pumpkin pie spice into large mixing bowl. Stir in oats, apricots, and walnuts. Combine eggs, milk and oil in small bowl; blend well. Add all at once to dry ingredients, stirrin just enough to moisten. Spoon batter into greased 8 cm muffin-pan cups, fill 0.66666666666667rds full. Bake in 180ÂșC . oven 30 minutes or until golden brown. Serve hot with butter and homemade jam or jelly.
