Ingredients
- 1 ripe banana
- 1 mint sprigs for (garnish)
- 600 ml strawberry juice see notes
- 260 gr mixed blueberries
- 250 gr sparkling apple cider
- 230 gr champagne
- 60 ml yogurt
Combine juices and banana in a blender (or use an immersion blender) and blend until smooth. Add sparkling cider and ladle into chilled soup bowls. Serve with a dollop of yogurt, a scattering of fresh berries and a mint sprig or two.
