Ingredients
- 4 garlic (cloves)
- 2 onions
- 2 stock
- 2 lb runner beans
- 1 lb tomatoes
- 1/2 c olive oil
- 1 tb sugar
- 1 ts salt
- 1/2 ts black pepper
- 1 ts basil
Heat oil in a pot & fry the onion for 2 minutes. add garlic & fry together. Add the rest of the ingredients & the seasonings. Mix together well. Fry for 5 minutes. Add stock. Simer till the beans are tender. Serve hot or cold. Jack Santa Maria, "Greek Vegetarian Cookery"
