Ingredients
- 12 bundt (pan)
- 4 eggs
- 1 frosting
- 2 c all purpose flour
- 1 c pineapple in juice (drained canned crushed)
- 1 c vegetable oil
- 1 c sugar
- 1 c firmly packed golden brown
- 1 c powdered sugar
- 1 1/2 c carrots (finely grated)
- 8 oz pkg cream cheese
- 3/4 c pecans (chopped)
- 1/2 c mashed ripe bananas
- 3 tb butter (unsalted)
- 2 ts baking soda
- 1 tb cinnamon (ground)
- 1/4 ts salt
- 1/4 ts cinnamon additional cinnamon for cake preheat oven (ground)
FOR FROSTING: Beat the cream cheese, powdered sugar, butter and 1/4 teaspoon cinnamon in a medium bowl until smooth. Spread frosting over the cake.
