Ingredients
- 1 bunch watercress
- 1 onion (chopped)
- 1 in a food processor
- 4 pounds peas unshelled (fresh)
- 2 1/2 cups nonfat chicken broth
- 1/4 cup cream
- 3 tablespoons butter (unsalted)
- 1 tablespoon basil (fresh chopped)
- 3 slices bacon crisp (fried)
- 1 slice potatoes unpeeled (white)
- some sour cream
- some salt and pepper
To serve, add cream, thinning soup to desired consistency. Stir in reserved pea s. Pour soup into serving bowls and crumble bacon over each. Add a dollop of so ur cream and top with a basil leaf.
