Ingredients
- 20 pimento stuffed olives
- 4 taco shells
- 3 chickn breasts (skinless)
- 1 1/2 quart casserole
- 1 1/2 c stewed tomatoes
- 1 c pepper (chopped red)
- 1 c scallions (chopped)
- 1/2 c celery (chopped)
- 1 1/2 oz cheddar cheese (shredded)
- 1 t local margarine
crushed taco chips, cheese and olives. Microwave on high 2 minutes, until cheese melts. Serve with rice and a salad. Each serving provides: 1 fat, 2 1/2 proteins, 2 vegetables, 1/2 bread. Per serving: 351 calories.
