Ingredients
- 1 3/4 potato (diced red)
- 6 c long rice (hot cooked grain)
- 2 1/2 c water
- 2 1/2 cups water
- 1 c green peas (frozen)
- 1 c bell pepper (diced yellow)
- 1 c grannysmith apple
- 1/2 c onion (finely chopped)
- 2 ts vegetable oil
- 1 t all purpose flour
- 1 ts curry powder
- 1/2 ts cumin (ground)
- 1/2 ts salt
- 1/4 ts pepper
- 1 package garbanzobeans
until potato is tender. Add apple, peas and beans; cover and cook an additional 10 minutes. Serve over rice. Serving size is 1 cup bean mixture and 1 cup rice.
