Ingredients
- 2 garlic (cloves minced)
- 1 1/2 lentils (red)
- 7 1/2 cups water
- 2 cups onion (chopped)
- 1 teaspoon wine vinegar (red)
- 1 teaspoon turmeric (ground)
- 2 tablespoons parsley (chopped fresh)
- 3/4 teaspoon cumin (ground)
- 1/2 teaspoon ginger (ground)
- 1/4 teaspoon black pepper (freshly ground)
- 1/8 teaspoon cayenne pepper
Saute the onion and garlic in 1/2 cup of the water in a large pot until the onion is soft, about 5 minutes. Add the seasonings and cook for 1 minute. Add the lentils and the remaining water. Bring to a boil, reduce the heat, cover and simmer for 1 hour. Stir in the vinegar. Garnish with parsley before serving.
