Ingredients
- 2 flour tortillas
- 1 lime
- 3/4 cup black beans
- 3/4 cup tomatoes (diced)
- 1/2 cup pepper (red diced)
- 1/2 cup scallions (chopped)
- 1 1/2 cups lettuce (shredded)
- 2 tablespoons peanuts
- 2 tablespoons coriander (fresh)
- 1/4 teaspoon cumin (ground)
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1 pinch pepper flakes (red)
1. Combine tomatoes, red pepper, scallions, coriander and 2 tsp lime juice, lim e zest, cumin, chili powder salt and red pepper flakes.
2. Stir in black beans and set aside.
3. Warm tortillas one at a time in a hot skillet.
4. Top with shredded lettuce, spoon on tomato mixture and sprinkle with peanuts .
