- 4 eggs (whole beaten)
- 3 cake pans
- 1 milk if needed
- 2 cups sugar
- 1 pound confectioners sugar
- 3 cups carrots (grated)
- 1 1/2 cups oil
- 2 cups self rising flour
- 1/2 cup nuts (chopped)
- 1/4 cup margarine
- 3 teaspoon vanilla
- 2 teaspoons cinnamon
- 1 package cream cheese
Cream together the remaining ingredients, adding milk if needed to make the icing spreadable. Spread on cooled cake
