Ingredients
- 4 egg whites
- 1 1/2 c sugar
- 2 c sifted cake flour
- 1 c skim milk
- 1/2 c vegetable oil
- 3 ts baking powder
- 1 ts vanilla
- 1 ts salt
Margarine (optional) If desired, use plan confectioners' sugar frosting. These cakes may be filled with jelly, preserves, or lemon cornstarch filling. Preheat oven to 350 (moderate). Prepare a 10-inch tube pan or two 8-inch layer pans by greasing lightly with oil or margarine and dusting with flour. Sift together in a mixing bowl the flour, salt, and sugar. Add the oil and 2/3 cup of the milk. Stir until the flour is dampened and beat 1 minute, Stir in the baking powder and add the remaining 1/2 cup milk, the egg whites, and vanilla.
