Ingredients
- 2 eggs
- 450 gr packed brown sugar
- 450 gr unbleached all-purpose flour
- 190 gr shortening
- 170 gr raisins
- 120 gr coffee (cold)
- 65 gr coarsely nuts (chopped)
- 5 gr baking soda
- 3 gr salt
- 3 gr cinnamon (ground)
- 2 gr nutmeg (ground)
Heat oven to 200ºC . Mix brown sugar, shortening, coffee, applesauce and eggs. Stir in remaining ingredients (dough will be very soft. Drop by rounded teaspoonfuls about 5 cm apart onto lightly greased cookie sheet. Bake until almost no indentation remains when touched, about 7 minutes. Makes about 7 dozen
