Ingredients
- 2 eggs unbeaten
- 220 gr sifted all-purpose flour
- 150 gr mashed ripe bananas
- 130 gr granulated sugar
- 65 gr coarsely nuts (chopped)
- 65 gr soft shortening
- 9 gr baking powder
- 1 gr baking soda
- 1 gr salt
Heat oven 358 deg F. Grease 9 x 5 x 8 cm loaf pan. Sift flour, B.P., baking soda with electric mixer at medium speed thoroughly mix shortening with sugar.
Then, with eggs, until very light and fluffy about 4 minutes. Altogether, then at low speed or blend, beat in flour mixture to which chopped nuts have been added alternating with bananas until mixture is just smooth then turn into pan. Bake 1 hour or until done. Cool in pan 10 minutes. Cool overnight before slicing.
