Ingredients
- 4 egg yolks
- 3 conrstarch
- 3 egg whites
- 1 lemon
- 240 ml boiling water
- 200 gr sugar
- 60 ml lemon juice
- 50 gr sugar
- 28 gr butter
- 1 gr salt
Combine cornstarch and sugar, add water slowly, stirring constantly, until thick and smooth. Add slightly beaten egg yolks, butter, lemon rind and juice and salt,. Cook 2-3 minutes. Pour into baked shell. Cover with meringue made from 3 egg whites, beaten stiff and 2 tablespoon sugar. Bake in slow oven 15 minutes until brown.
